A kitchen cleaver forged from NCV1/80CRV2 steel, with a traditional shape and a thin blade (around 3mm). This combination allows it to be used for chopping and slicing, as well as scooping and transferring food into dishes.
Forged texture on the blade and slight forged-in S-grind prevents the sliced material from sticking to the blade. At the same time, the blade is not difficult to wash thoroughly.
80CRV2 steel is not rust resistant but it holds edge very well, sharpens easily and will be covered with a beautiful natural patina over time.
Handle scales are made from stablised birch burl, resistant to moisture and carbon fiber pins.
